About half an hour later, the update is stuck on (Installing - Calculating.) This doesn't seem normal - the last time I installed the Loops, they were done in about ten minutes. Force quitting and re-opening the App Store doesn't help, nor does a reboot. When I open the App Store, the update is still at the same process. The Mac might have been stuck on 20 minutes remaining for the past two hours, but this doesn't necessarily mean it's not busy trying to install the software. Look at the Log to see if your Mac. If your Mac hangs on the “Setting up your Mac” screen, which should appear shortly after the App Store Catalina download finishes and the installation kicks off, you have one great solution to bend.
The time estimate can be wildly inaccurate. If you decide the installation will never finish, force the Mac to shut down by holding its power button for a long time (at least ten seconds or so). It may restart with the upgrade completely finished. Or, it might not restart at all. In any event you can't wait forever, so it's not as though you have much choice. Give it a few hours, at least.

As long as you created a Time Machine or equivalent backup according to Apple's upgrade instructions, there is no reason to be concerned about losing any of that Mac's data. If forcing the Mac to shut down results in an inability to boot, then boot macOS Recovery and restore the system from that backup. https://clevergold361.weebly.com/best-team-collaboration-tool-for-apps-and-macs.html.
